Fluffy Pancake with Crispy Bacon & Fresh Blueberries Recipe
A tantalising blend of fluffy pancakes, crispy bacon, fresh blueberries all drenched in golden syrup. An ideal brunch treat!

METHOD
Step 1.
In a large bowl, combine flour, baking powder, salt and sugar.Step 2.
In another bowl, beat together the egg, milk and melted butter. Gradually add this mixture to the dry ingredients and stir until a smooth batter is formed.Step 3.
Heat a lightly oiled frying pan over medium-high heat. Pour or scoop the batter onto the pan, using approximately 1/4 cup for each pancake.Step 4.
Fry each pancake until brown on both sides.Step 5.
Cook bacon in a frying pan (no oil) until crispy.Step 6.
Stack pancakes, adding bacon between each layer. Pour over golden syrup and scatter over the blueberries and serve immediately.
