Fluffy Pancake with Crispy Bacon & Fresh Blueberries Recipe

A tantalising blend of fluffy pancakes, crispy bacon, fresh blueberries all drenched in golden syrup. An ideal brunch treat!

METHOD

  • Step 1.

    In a large bowl, combine flour, baking powder, salt and sugar.
  • Step 2.

    In another bowl, beat together the egg, milk and melted butter. Gradually add this mixture to the dry ingredients and stir until a smooth batter is formed.
  • Step 3.

    Heat a lightly oiled frying pan over medium-high heat. Pour or scoop the batter onto the pan, using approximately 1/4 cup for each pancake.
  • Step 4.

    Fry each pancake until brown on both sides.
  • Step 5.

    Cook bacon in a frying pan (no oil) until crispy.
  • Step 6.

    Stack pancakes, adding bacon between each layer. Pour over golden syrup and scatter over the blueberries and serve immediately.

  10. 50 mlGolden syrup
