French Toast with Fresh Figs Recipe

This sweet and savoury dish combines the creaminess of French toast with the rich flavours of fresh figs and topped with chopped hazelnuts for added crunch. A wonderful breakfast or brunch treat.

METHOD

  • Step 1.

    Crush the hazelnuts into small pieces and toast them lightly in a pan over medium heat. Set aside.
  • Step 2.

    Beat the eggs, milk and vanilla extract together in a shallow dish.
  • Step 3.

    Dip each slice of brioche into the egg mixture, making sure both sides are well coated.
  • Step 4.

    In a large skillet or frying pan, melt the butter over medium heat. Add the brioche slices and cook until golden brown on both sides.
  • Step 5.

    While the toast is cooking, chop the fresh figs into small pieces. Set aside.
  • Step 6.

    To serve, stack the French toast slices on a plate, along with the figs and toasted hazelnuts. Top with a dollop of whipped cream and drizzle with honey or maple syrup if desired.
