METHOD

  • Step 1.

    Peel the prawns, remove the tails on. Place them in a bowl and set aside.
  • Step 2.

    Heat the garlic and chilli oil in a large frying pan over medium heat.
  • Step 3.

    Add the prawns and cook for 2 minutes on each side, or until the prawns have turned pink and are cooked through.
  • Step 4.

    Add the fresh coriander, salt, and black pepper to the pan and mix thoroughly.
  • Step 5.

    Turn off the heat and let the prawns absorb the flavours of the oil and coriander for a few minutes before serving.
