Spicy Fish Stew Recipe

This spicy stew with fresh fish is the perfect blend of robust flavours from the saltiness of the sea and the heat from the spices. It's a delightful, warming dish that's perfect as a winter main course or a hearty lunch.

METHOD

  • Step 1.

    Heat the oil in a large pot over medium heat. Add the onions, fresh chilli and garlic, and cook until they're soft and translucent.
  • Step 2.

    Add the tomatoes, chilli flakes, and bay leaves into the pot and simmer for about 10 minutes.
  • Step 3.

    Add the fish stock and white wine into the pot, and simmer for another 10 minutes.
  • Step 4.

    Add the fish pieces and prawns into the pot, and cook for about 15 minutes or until they're done.
  • Step 5.

    Season with salt and pepper, then stir in the parsley before removing from heat.
  • Step 6.

    Serve the stew hot with a side of fresh bread.

INGREDIENTS

  1. 2 tbspOlive Oil

  2. 2 Onions, chopped

  3. 3 Garlic Cloves, minced

  4. 1 tin of Chopped Tomatoes

  5. 1 tspChilli flakes

  6. 2 Bay leaves

  7. 500 mlFish stock

  8. 250 mlDry white wine

  9. 500 gWhite fish, cut into pieces

  10. 200 gLarge prawns, peeled & deveined

  11. 1 tspSea Salt

  12. 1 tspBlack Pepper, crushed

  13. 3 tbspFresh Parsley, finely chopped

  14. 1 Fresh Red Chilli, chopped & deseeded
