METHOD
Step 1.
Bring a large pot of salted water to a boil. Add peeled potatoes and cook until tender.Step 2.
While the potatoes are cooking, peel and chop the cucumber, parsley, red onion, mango and yellow peppers.Step 3.
Drain the potatoes and let them cool. Once cooled, slice them into thin rounds.Step 4.
In a large bowl, combine the sliced potatoes, chopped cucumber, parsley, red onion, mango and yellow peppers.Step 5.
Toss the salad gently until all ingredients are well mixed. Season with salt and pepper to taste.Step 6.
Chill in the refrigerator for at least an hour before serving.
