Fresh Tangy Potato Salad with Mango Recipe

A refreshing, vibrant potato salad with a twist. Bringing together fresh potatoes, cucumber, parsley, red onion, mango and yellow peppers for an exciting taste.

METHOD

  • Step 1.

    Bring a large pot of salted water to a boil. Add peeled potatoes and cook until tender.
  • Step 2.

    While the potatoes are cooking, peel and chop the cucumber, parsley, red onion, mango and yellow peppers.
  • Step 3.

    Drain the potatoes and let them cool. Once cooled, slice them into thin rounds.
  • Step 4.

    In a large bowl, combine the sliced potatoes, chopped cucumber, parsley, red onion, mango and yellow peppers.
  • Step 5.

    Toss the salad gently until all ingredients are well mixed. Season with salt and pepper to taste.
  • Step 6.

    Chill in the refrigerator for at least an hour before serving.
