Satay Chicken Skewers Recipe

Delicious marinated chicken skewers with a peanut satay sauce. A perfect blend of spicy, sweet and savoury flavours.

METHOD

  • Step 1.

    Soak skewers in cold water for at least 30 minutes.
  • Step 2.

    Combine chicken, soy sauce, curry powder, oil, and sugar in a bowl. Cover and refrigerate for at least an hour.
  • Step 3.

    Thread the chicken pieces onto the skewers.
  • Step 4.

    Preheat grill to medium-high heat. Cook skewers for 4-5 minutes each side or until cooked through.
  • Step 5.

    For the satay sauce: Heat oil in a pot over medium heat. Add curry powder and stir for 1 minute. Add peanut butter, coconut milk, sugar and soy sauce. Stir until warmed and well blended.
  • Step 6.

    Serve the skewers with the satay sauce dripped over and enjoy.

  3. 1 tspCurry powder

  4. 2 tbspOil

  5. 1 tbspSugar, for the marinade

  6. 10 Bamboo skewers

  7. 2 tbspPeanut butter

  8. 200 mlCoconut milk

  9. 1 tbspSugar, for the sauce

  10. 1 tbspSoy sauce, for the sauce
