METHOD

  • Step 1.

    Preheat your grill to a medium-high heat.
  • Step 2.

    Peel the corn husks back, but don't remove them. Remove the silk threads from each cob.
  • Step 3.

    In a small bowl, mix together the olive oil, minced garlic, and a pinch of salt. Brush this mixture over the corn cobs.
  • Step 4.

    Pull the husks back over the corn to cover it.
  • Step 5.

    Place the corn on the grill, turning occasionally, until the husks are charred and the corn kernels are tender, about 15-20 minutes.
  • Step 6.

    In the meantime, finely chop the fresh basil.
  • Step 7.

    Once cooked, remove the corn from the grill and carefully peel back the charred husks.
  • Step 8.

    Sprinkle the corn with salt to taste and garnish with the freshly chopped basil.
  • Step 9.

    Serve immediately and enjoy!
