Grilled Vegetables with Spicy Hummus & Pine Nuts Recipe

A colourful and flavoursome grilled vegetable dish, served with homemade spicy hummus and crunchy pine nuts. A delicious vegetarian meal perfect for a summer BBQ or a cool autumn evening.

METHOD

  • Step 1.

    Preheat the grill on a medium heat.
  • Step 2.

    Wash and thinly slice vegetables, lay them out on a grilling tray.
  • Step 3.

    Drizzle a little olive oil over vegetables, season with salt and pepper and then place under the grill.
  • Step 4.

    Grill until the vegetables show nice caramelisation, for about 10-15 minutes.
  • Step 5.

    While the vegetables are grilling, prepare the spicy hummus by combining the chickpeas, tahini, garlic, lemon juice, water, and cayenne pepper. Blend until smooth.
  • Step 6.

    Taste and season with salt and pepper as desired.
  • Step 7.

    Once the vegetables are ready, serve the grilled vegetables with a dollop of spicy hummus and a sprinkle of toasted pine nuts.

  6. 1 Canned chickpeas

  7. 2 tbspTahini

  8. 2 Garlic clove

  9. 1 Lemon

  10. 100 mlWater

  11. 1 tspCayenne pepper

  12. 1 Salt & pepper

  13. 50 gPine nuts
