Hearty Beef Goulash with Savoury Dough Dumplings Recipe

METHOD
Step 1.
Begin by heating a large pot over medium heat, then add the diced beef, browning it all over. Do this in batches if necessary to avoid overcrowding.Step 2.
Once the beef is browned, set it aside. Then in the same pot, add the chopped onions and cook until they're soft and golden.Step 3.
Return the beef to the pot. Stir in the paprika, minced garlic, tomato paste, beef stock, and bay leaves. Bring to a boil, then cover and simmer on low heat for about 2 hours.Step 4.
During the last 30 minutes of cooking, add the diced carrots to the goulash. Continue to simmer.Step 5.
To make the dumplings, mix together self-raising flour, a pinch of salt, and suet in a bowl. Gradually add water until a dough forms. Roll the dough into palm sized balls.Step 6.
Gently place the dumplings on top of the goulash, cover the pot, and steam them for about 20 minutes until they are puffed up and cooked through.Step 7.
Serve the goulash hot, with the dumplings. Garnished with chopped parsley.
