Roast Pumpkin with Garlic & Rosemary Recipe
A heartwarming recipe of succulent char grilled pumpkin prepared with the aromatic flavours of garlic, rosemary and onions. Perfect as a comforting side dish for your autumn dinner table.

METHOD
Step 1.
Preheat your grill over medium-high heat.Step 2.
Cut the pumpkin into quarters and discard the guts. Slice into 1-inch thick slices with the skin still on.Step 3.
Peel and finely chop the garlic and onion.Step 4.
Mix the chopped garlic, onion and rosemary in a bowl.Step 5.
In a large baking dish drizzle the pumpkin slices with olive oil, toss through the garlic, onion and rosemary. Season with salt and pepper.Step 6.
Place under the grill, cook for about 15 minutes on each side or until they are charred and tender.Step 7.
Serve hot.

1 Medium size pumpkin
4 Garlic cloves
2 tbspFresh rosemary
1 Large onion
2 tbspExtra virgin olive oil
1 tspSalt & Pepper, to taste
