Roast Pumpkin with Garlic & Rosemary Recipe

A heartwarming recipe of succulent char grilled pumpkin prepared with the aromatic flavours of garlic, rosemary and onions. Perfect as a comforting side dish for your autumn dinner table.





  • Step 1.

    Preheat your grill over medium-high heat.
  • Step 2.

    Cut the pumpkin into quarters and discard the guts. Slice into 1-inch thick slices with the skin still on.
  • Step 3.

    Peel and finely chop the garlic and onion.
  • Step 4.

    Mix the chopped garlic, onion and rosemary in a bowl.
  • Step 5.

    In a large baking dish drizzle the pumpkin slices with olive oil, toss through the garlic, onion and rosemary. Season with salt and pepper.
  • Step 6.

    Place under the grill, cook for about 15 minutes on each side or until they are charred and tender.
  • Step 7.

    Serve hot.

  4. 1 Large onion

  5. 2 tbspExtra virgin olive oil
