METHOD
Step 1.
Preheat the oven to 180C/350F/Gas 4.Step 2.
Beat the butter and the sugar together in a bowl until light and fluffy.Step 3.
Add the golden syrup, flour, bicarbonate of soda and ground ginger and mix well until it forms a dough.Step 4.
Roll the dough into small balls and place on a baking tray lined with parchment paper ensuring plenty of space between each biscuit. Squash the balls with the back of a spoon.Step 5.
Bake in the preheated oven for about 15 minutes, or until golden-brown.Step 6.
Cool on a wire rack before serving.
