METHOD
Step 1.
Line a baking sheet with parchment paper.Step 2.
In a medium-sized bowl, mix the peanut butter, icing sugar, butter and vanilla until well combined.Step 3.
Roll the mixture into 1-inch balls and place them on the prepared baking sheet.Step 4.
Place the balls in the freezer for about 15 minutes until they are firm.Step 5.
In a microwave, melt the dark chocolate and coconut oil together in 30-second bursts, stirring after each, until completely smooth.Step 6.
Dip each peanut butter ball in the melted chocolate, allowing excess to drip off, then return it to the baking sheet. Sprinkle over some chopped nuts and desiccated coconut before the chocolate sets.Step 7.
Chill the dipped balls in the refrigerator until the chocolate sets, about 15 minutes.Step 8.
