Homemade Mini Moon Cake Recipe

METHOD
Step 1.
Start by preparing the filling. In a bowl, mix together the red bean paste, candied citrus peel, and melon seeds.Step 2.
On your work surface, roll out the pastry dough into a thin sheet. Cut out circles using a biscuit cutter.Step 3.
Put a spoonful of the filling in the centre of each pastry circle. Fold the edges up and around the filling and seal at the top.Step 4.
Place each mooncake seal-side down on a baking tray. Brush each with the beaten egg yolk and decorate tops with a few melon seeds.Step 5.
Bake in a preheated oven at 180°C for 20 minutes or until golden brown., Allow to cool before serving.
