Homemade Yule Log Cake Recipe

METHOD

  • Step 1.

    Preheat the oven to 180°C and line a rectangular baking pan with parchment paper.
  • Step 2.

    In a large mixing bowl, beat egg yolks, and half of the sugar until thickened. Stir in cocoa powder and water.
  • Step 3.

    In another mixing bowl, beat egg whites until soft peaks form. Gradually add remaining sugar, beating until stiff. Fold into egg yolk mixture.
  • Step 4.

    Pour the mixture into the prepared baking pan, and bake for about 20 minutes or until cake springs back when lightly touched.
  • Step 5.

    After the cake has cooled, spread whipped cream over cake to within 1 in. of edges. Roll up from a short side; place on serving platter.
  • Step 6.

    Make a ganache: melt dark chocolate and mix with heavy cream. Pour the ganache over the Swiss roll and use a fork to create a bark-like appearance. Dust with icing sugar.
  • Step 7.

    Refrigerate for 1-2 hours until set, then slice and serve.
