Homemade Yule Log Cake Recipe

METHOD
Step 1.
Preheat the oven to 180°C and line a rectangular baking pan with parchment paper.Step 2.
In a large mixing bowl, beat egg yolks, and half of the sugar until thickened. Stir in cocoa powder and water.Step 3.
In another mixing bowl, beat egg whites until soft peaks form. Gradually add remaining sugar, beating until stiff. Fold into egg yolk mixture.Step 4.
Pour the mixture into the prepared baking pan, and bake for about 20 minutes or until cake springs back when lightly touched.Step 5.
After the cake has cooled, spread whipped cream over cake to within 1 in. of edges. Roll up from a short side; place on serving platter.Step 6.
Make a ganache: melt dark chocolate and mix with heavy cream. Pour the ganache over the Swiss roll and use a fork to create a bark-like appearance. Dust with icing sugar.Step 7.
Refrigerate for 1-2 hours until set, then slice and serve.
