Homemade Easter Panettone Recipe

METHOD

  • Step 1.

    Begin by preheating your oven to 170°C (340°F).
  • Step 2.

    In a small bowl, dissolve 1 tsp of sugar in 60ml of warm water, then sprinkle the yeast over the top. Let it sit for about 10 minutes, until frothy.
  • Step 3.

    In a separate bowl, mix together the flour, remaining sugar, and salt.
  • Step 4.

    Make a well in the centre of the dry ingredients and add in the yeast mixture, melted butter, vanilla extract, and eggs. Mix until you have a smooth and elastic dough.
  • Step 5.

    Fold in the candied orange peel and sultanas.
  • Step 6.

    Place the dough in a greased panettone tin or a deep cake tin lined with parchment paper. Allow to rise in a warm place for about 1.5 hours, or until it has doubled in size.
  • Step 7.

    Bake for about 45 minutes, or until a skewer inserted into the centre comes out clean. Allow to cool.
  • Step 8.

    For the icing, mix together the icing sugar, vanilla extract, and milk until smooth. Drizzle over the cooled panettone and top with fresh strawberries.
  • Step 9.

    Allow icing to set before serving.
