Lemon & Poppyseed Loaf Cake Recipe

METHOD

  • Step 1.

    Preheat your oven to 180C and grease your loaf tin.
  • Step 2.

    In a bowl, mix together sugar, lemon zest, and poppy seeds.
  • Step 3.

    Beat the butter until creamy, add the sugar mixture, and beat until fluffy.
  • Step 4.

    Add eggs one at a time, followed by vanilla extract.
  • Step 5.

    In a separate bowl, mix flour, baking powder, bicarbonate of soda and salt.
  • Step 6.

    Slowly add the dry ingredients into the wet mixture, alternating with yogurt, starting and ending with the dry ingredients.
  • Step 7.

    Pour the batter into the prepared loaf tin.
  • Step 8.

    Bake for 50 minutes or until a skewer inserted comes out clean.
  • Step 9.

    Let cake cool before slicing.

  4. 113 gUnsalted Butter

  5. 2 Eggs

  6. 1 tspVanilla Extract

  7. 300 gPlain Flour

  9. 0.5 tspBicarbonate of Soda

  10. 0.5 tspSalt

  11. 120 mlGreek Yogurt
