METHOD
Step 1.
Preheat your oven to 180C and grease your loaf tin.Step 2.
In a bowl, mix together sugar, lemon zest, and poppy seeds.Step 3.
Beat the butter until creamy, add the sugar mixture, and beat until fluffy.Step 4.
Add eggs one at a time, followed by vanilla extract.Step 5.
In a separate bowl, mix flour, baking powder, bicarbonate of soda and salt.Step 6.
Slowly add the dry ingredients into the wet mixture, alternating with yogurt, starting and ending with the dry ingredients.Step 7.
Pour the batter into the prepared loaf tin.Step 8.
Bake for 50 minutes or until a skewer inserted comes out clean.Step 9.
Let cake cool before slicing.
