Plum Traybake Cake with Sticky Plum Glaze Recipe

A simple and delicious sponge traybake cake that features ripe plums and a sticky plum glaze. Perfect for any gathering or a sweet treat on a cool evening.

METHOD

  • Step 1.

    Preheat your oven to 175°C (155°C fan) mark 5. Grease a 20.5cm square baking tray and line with parchment paper.
  • Step 2.

    Beat 200g butter and 200g caster sugar together until fluffy and light. Add 4 large eggs, one at a time, beating well after each addition.
  • Step 3.

    Fold in 200g self-raising flour and 1 tsp vanilla extract. Spread the mixture onto the prepared baking tray.
  • Step 4.

    Poke halved plums into the top of the sponge, cut side up.
  • Step 5.

    Bake in the preheated oven for 60 minutes or until a skewer inserted into the centre comes out clean.
  • Step 6.

    While the cake is baking, make the plum glaze by combining 100g of plums, 4 tbsp of sugar, and 2 tbsp of water in a small saucepan. Bring to a simmer and cook until the plums have broken down and the liquid has reduced to a thick glaze.
  • Step 7.

    Remove and discard the plumbs or any large lumps from the glaze making sure to squeeze out all the juice and set the glaze aside.
  • Step 8.

    Remove the cake from the oven and while still warm, drizzle with the sticky plum glaze. Let cool before cutting into squares.
  • Step 9.

    Serve as is or with a side of double cream or warm custard.
