Plum Traybake Cake with Sticky Plum Glaze Recipe
A simple and delicious sponge traybake cake that features ripe plums and a sticky plum glaze. Perfect for any gathering or a sweet treat on a cool evening.

METHOD
Step 1.
Preheat your oven to 175°C (155°C fan) mark 5. Grease a 20.5cm square baking tray and line with parchment paper.Step 2.
Beat 200g butter and 200g caster sugar together until fluffy and light. Add 4 large eggs, one at a time, beating well after each addition.Step 3.
Fold in 200g self-raising flour and 1 tsp vanilla extract. Spread the mixture onto the prepared baking tray.Step 4.
Poke halved plums into the top of the sponge, cut side up.Step 5.
Bake in the preheated oven for 60 minutes or until a skewer inserted into the centre comes out clean.Step 6.
While the cake is baking, make the plum glaze by combining 100g of plums, 4 tbsp of sugar, and 2 tbsp of water in a small saucepan. Bring to a simmer and cook until the plums have broken down and the liquid has reduced to a thick glaze.Step 7.
Remove and discard the plumbs or any large lumps from the glaze making sure to squeeze out all the juice and set the glaze aside.Step 8.
Remove the cake from the oven and while still warm, drizzle with the sticky plum glaze. Let cool before cutting into squares.Step 9.
Serve as is or with a side of double cream or warm custard.
