Pineapple Cheesecake Recipe

METHOD

  • Step 1.

    Preheat your oven to 160°C.
  • Step 2.

    Crush biscuits and mix with melted butter. Press the mixture into the base of a 23cm springform cake tin.
  • Step 3.

    Beat the cream cheese and sugar until smooth, then add the eggs, one at a time, beating as you add.
  • Step 4.

    Add lemon juice, vanilla essence and diced pineapple. Mix well.
  • Step 5.

    Pour the mixture over the biscuit base, top with pineapple rings and bake for approximately an hour or until set.
  • Step 6.

    Allow to cool, then refrigerate for at least 3 hours before serving.
