Pineapple Cheesecake Recipe

METHOD
Step 1.
Preheat your oven to 160°C.Step 2.
Crush biscuits and mix with melted butter. Press the mixture into the base of a 23cm springform cake tin.Step 3.
Beat the cream cheese and sugar until smooth, then add the eggs, one at a time, beating as you add.Step 4.
Add lemon juice, vanilla essence and diced pineapple. Mix well.Step 5.
Pour the mixture over the biscuit base, top with pineapple rings and bake for approximately an hour or until set.Step 6.
Allow to cool, then refrigerate for at least 3 hours before serving.

100 gButter, melted
500 gFull-fat cream cheese
100 gGranulated sugar
3 Large eggs
1 tbspLemon juice
1 tspVanilla essence
1 cupFresh pineapple, diced
