METHOD
Step 1.
Preheat the oven to 160°C (325°F).Step 2.
In a mixing bowl, combine 200g of graham cracker crumbs and 100g of melted butter. Press the mixture into the bottom of a 23 cm (9-inch) springform pan to form the crust.Step 3.
In a separate bowl, beat 500g of cream cheese until smooth and creamy.Step 4.
Add 200g of granulated sugar, the zest of 1 lime, and 1 tsp of vanilla extract. Beat until well combined.Step 5.
Add 3 large eggs, one at a time, beating well after each addition.Step 6.
Pour the cheesecake batter over the crust in the pan.Step 7.
Bake the cheesecake in the preheated oven for about 50-60 minutes, or until the edges are set and the center is slightly jiggly.Step 8.
Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour.Step 9.
Remove the cheesecake from the oven and refrigerate for at least 3 hours, or until fully chilled and set.Step 10.
In a saucepan, heat 150g of fresh blueberries, 2 tbsp of granulated sugar, and the juice of 1 lime over medium heat. Cook until the blueberries burst and the mixture thickens into a sauce. Let it cool.Step 11.
Spread the blueberry-lime sauce over the chilled cheesecake before serving.Step 12.
Slice the Blueberry and Lime Cheesecake and serve it chilled.
