Classic Beef Stew With Carrots and Potatoes Recipe

This classic beef stew recipe is a one-pot comfort food with tender beef, carrots, and potatoes that simmer in a rich savory gravy. It's simple, hearty, and perfect for a cold evening.

  • Step 1.

Heat 1 tbsp of oil in a large stew pot over medium-high heat. Add beef and brown for about 5-7 minutes. Transfer to a bowl and set aside.
  • Step 2.

In the same pot, without cleaning it, add 1 more tbsp of oil. Add onions and garlic and sauté until soft.
  • Step 3.

Return the browned beef to the pot, add flour, stirring to coat the beef with the flour.
  • Step 4.

Slowly add in the beef stock, followed by the carrots, potatoes, thyme, and bay leaves.
  • Step 5.

Reduce the heat to low, cover and let it simmer for about 2 hours, or until the beef is tender.
