METHOD
Step 1.
Heat 1 tbsp of oil in a large stew pot over medium-high heat. Add beef and brown for about 5-7 minutes. Transfer to a bowl and set aside.Step 2.
In the same pot, without cleaning it, add 1 more tbsp of oil. Add onions and garlic and sauté until soft.Step 3.
Return the browned beef to the pot, add flour, stirring to coat the beef with the flour.Step 4.
Slowly add in the beef stock, followed by the carrots, potatoes, thyme, and bay leaves.Step 5.
Reduce the heat to low, cover and let it simmer for about 2 hours, or until the beef is tender.Step 6.
Once done, check for seasoning. Add more salt and pepper if necessary, then serve.

1 kgDiced Beef
1.5 cupFinely Chopped Onion
3 Cloves of Garlic, minced
3 tbspAll-purpose Flour
1 lBeef Stock
3 Large potatoes, peeled & cut into chunks
3 Large carrots, peeled & cut into chunks
4 Sprigs of fresh thyme
2 Bay Leaves
4 tspSalt & Pepper, to taste
