Salted Caramel Pretzel Cupcakes Recipe

METHOD
Step 1.
Preheat your oven to 180°C and line your muffin tin with cupcake cases.Step 2.
In a large bowl, combine the flour, sugar, baking powder and butter, mixing until it takes on a sandy consistency.Step 3.
In a separate bowl, whisk together the eggs, milk and vanilla extract. Gradually add this to your dry ingredients, mixing until fully combined.Step 4.
Pour the batter into your cupcake cases until two-thirds full. Bake for 20-25 minutes until golden brown and a skewer inserted into the middle comes out clean.Step 5.
While the cupcakes are cooling, prepare your caramel frosting by combining the butter, icing sugar, caramel and milk until smooth.Step 6.
Once the cupcakes have cooled, spread the caramel frosting on top and finish off with a pretzel for added crunch.
