Salted Caramel Pretzel Cupcakes Recipe

METHOD

  • Step 1.

    Preheat your oven to 180°C and line your muffin tin with cupcake cases.
  • Step 2.

    In a large bowl, combine the flour, sugar, baking powder and butter, mixing until it takes on a sandy consistency.
  • Step 3.

    In a separate bowl, whisk together the eggs, milk and vanilla extract. Gradually add this to your dry ingredients, mixing until fully combined.
  • Step 4.

    Pour the batter into your cupcake cases until two-thirds full. Bake for 20-25 minutes until golden brown and a skewer inserted into the middle comes out clean.
  • Step 5.

    While the cupcakes are cooling, prepare your caramel frosting by combining the butter, icing sugar, caramel and milk until smooth.
  • Step 6.

    Once the cupcakes have cooled, spread the caramel frosting on top and finish off with a pretzel for added crunch.
