Snowball Protein Balls Recipe

Delightful and easy to make coconut protein balls, a perfect festive snack for those health conscious sweet cravings.

METHOD

  • Step 1.

    Blend the dates, almonds and half the coconut in a food processor until finely ground.
  • Step 2.

    Add the protein powder, coconut oil and chia seeds and blend again until mixed. Add the water bit by bit until you have a dough consistency.
  • Step 3.

    Roll the mixture into small balls and then roll them through the remaining coconut until each ball is covered.
  • Step 4.

    Place into small cupcake cases and then onto a large plate or baking tray. Chill in the refrigerator for about an hour.
  • Step 5.

    Once they have set in the fridge, pipe the frosting on top and finish with a holly leaf cake topper.
  • Step 6.

    Serve chilled or store in an airtight container in the fridge.

  1. 200 gMedjool dates

  2. 100 gDesiccated coconut

  3. 75 gRaw almonds

  4. 2 tbspProtein powder

  5. 2 tbspCoconut oil

  6. 1 tbspChia seeds

  7. 50 mlWater

  8. 67 mlVanilla frosting

  9. 1 Packet of holly leaf cake toppers
