Sticky Apple Pork with Rice Recipe

METHOD

  • Step 1.

    Begin by preheating your oven to 180°C.
  • Step 2.

    In a bowl, mix the apple sauce, honey, soy sauce, and garlic to create the glaze.
  • Step 3.

    Season the pork chops with salt and pepper, then sear them in a hot pan with olive oil until golden on each side.
  • Step 4.

    Place the seared pork chops in a baking dish and cover them with the apple glaze. Roast in the preheated oven for about 1 hour, or until thoroughly cooked, basting occasionally with the pan juices.
  • Step 5.

    Meanwhile, rinse the basmati rice under cold running water until the water runs clear.
  • Step 6.

    Bring water to a boil in a saucepan, add the rice and a pinch of salt, then lower the heat. Cover and simmer for 10-12 minutes or until the water is absorbed and the rice is tender.
  • Step 7.

    Remove from heat and let the rice stand covered for 10 minutes, then fluff it with a fork.
  • Step 8.

    Serve the baked pork chops over the fluffy rice, spooning extra glaze from the baking dish over the top.
  • Step 9.

    Optionally, garnish with finely chopped spring onions or fresh herbs before serving.
