METHOD
Step 1.
Heat 2 tbsp of oil in a large flameproof dish over a medium-high flame.Step 2.
Add the onion and cook until soft but not browned.Step 3.
Add the peppers, garlic and tomatoes, and cook until the tomatoes start to break down.Step 4.
Stir in the paprika and cook for another minute.Step 5.
Add in the rice and coat well in the oil and vegetables.Step 6.
Pour in the hot stock and stir well.Step 7.
Add in the squid and prawns. Cook for about 4 minutes until the prawns turn pink.Step 8.
Nestle the mussels into the rice and cook for 3-4 minutes until all the mussels have opened.Step 9.
Sprinkle in the peas and cook for a further two minutes.Step 10.
Serve with lemon wedges and salt and pepper to taste.

2 tbspOlive Oil
1 Onion, finely chopped
2 Red and Green Peppers, sliced
2 Garlic Cloves, crushed
5 Fresh Tomatoes, chopped
1 tspPaprika
300 gPaella Rice
1.2 lHot Chicken Stock
2 Squid, cleaned and cut into rings
225 gLarge King Prawns, raw and peeled
500 gMussels, cleaned
100 gFrozen Peas
1 Lemon, cut into wedges
