Sticky Fig Chocolate Cake Recipe

METHOD
Step 1.
Preheat your oven to 180C (356F). Grease and line a 20cm round cake tin.Step 2.
In a large bowl, whisk together the melted butter, caster sugar, and brown sugar until smooth.Step 3.
Beat in the eggs one at a time, followed by the vanilla extract and buttermilk, ensuring each ingredient is fully incorporated before adding the next.Step 4.
Sift together the flour, cocoa powder, baking powder, and a pinch of salt. Gradually fold the dry ingredients into the wet mixture until just combined.Step 5.
Gently fold in the chopped figs and pour the batter into the prepared cake tin.Step 6.
Bake for 45-50 minutes, or until a skewer inserted into the centre comes out clean. Allow to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.Step 7.
For the ganache, heat the cream in a small saucepan until just simmering, then pour over the chopped chocolate and let sit for a minute. Stir until the chocolate is melted and the mixture is smooth.Step 8.
Spread the ganache over the cooled cake and decorate with quartered figs before serving.
