Sticky Fig Chocolate Cake Recipe

METHOD

  • Step 1.

    Preheat your oven to 180C (356F). Grease and line a 20cm round cake tin.
  • Step 2.

    In a large bowl, whisk together the melted butter, caster sugar, and brown sugar until smooth.
  • Step 3.

    Beat in the eggs one at a time, followed by the vanilla extract and buttermilk, ensuring each ingredient is fully incorporated before adding the next.
  • Step 4.

    Sift together the flour, cocoa powder, baking powder, and a pinch of salt. Gradually fold the dry ingredients into the wet mixture until just combined.
  • Step 5.

    Gently fold in the chopped figs and pour the batter into the prepared cake tin.
  • Step 6.

    Bake for 45-50 minutes, or until a skewer inserted into the centre comes out clean. Allow to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
  • Step 7.

    For the ganache, heat the cream in a small saucepan until just simmering, then pour over the chopped chocolate and let sit for a minute. Stir until the chocolate is melted and the mixture is smooth.
  • Step 8.

    Spread the ganache over the cooled cake and decorate with quartered figs before serving.

  11. 6 Fresh figs, chopped

  12. 200 mlDouble cream

  13. 200 gDark chocolate, chopped

  14. 4 Fresh figs, quartered (for decoration)
