METHOD

  • Step 1.

    Preheat your oven to 200°C. Line two baking sheets with greaseproof paper.
  • Step 2.

    In a large pan, combine water, butter, sugar, and salt. Bring to a boil over medium heat.
  • Step 3.

    Once boiling, quickly stir in the flour. Continue to stir until the mixture forms a ball.
  • Step 4.

    Remove from heat and let cool for 5 minutes. Then, beat in the eggs one at a time.
  • Step 5.

    Drop tablespoons of dough onto the prepared baking sheets. Bake in the preheated oven for 20-25 minutes, or until golden brown.
  • Step 6.

    In the meantime, whip the cream with the icing sugar until soft peaks form.
  • Step 7.

    Rinse the strawberries, remove the stems and cut them into small pieces. Stir them into the whipped cream.
  • Step 8.

    Once the puff shells are cool, cut them in half and fill with the strawberry cream.
  • Step 9.

    Dust with more icing sugar and serve immediately.
