Sweet Potato & Blue Cheese Burgers Recipe
Tasty Veggie Burgers, served with a side salad.

METHOD
Step 1.
Bring a saucepan of water to the boil, add a pinch of salt. Cook all the potatoes together for 10-15 minutes or until tender. Drain and set aside.Step 2.
Meanwhile, heat 1 tsp of oil in a frying pan over a medium heat, add the onions and garlic the cook until caramelised. Transfer to a large mixing bowl and set aside.Step 3.
Combine the cooked potatoes with the onion in the mixing bowl, roughly mashing together.Step 4.
In a new bowl add the flour to 80ml of water and stir into a batter. Then add this mix to the bowl of potatoes and crumble in the blue cheese. Season with salt and pepper, then mix well.Step 5.
Roll the mixture into 5 evenly sized balls, stirring in more flour if mixture is too wet. Set aside on a plate.Step 6.
On a medium heat add 1 tbsp of oil into a large frying pan. Now carefully add the balls into the pan, cooking in batches as needed. Gently flatten them with a spatula and cook for about 5 minutes each side, or until browned. Add more oil to the pan as you go, if needed.Step 7.
In a new bowl toss together the lettuce, spinach, tomatoes and drizzle with the dressing.Step 8.
Assemble the burgers and serve them alongside a handful of the salad.

2 Red Onions, finely chopped
4 Garlic cloves, crushed
1 Lemon, halved
50 gPlain Flour
120 gBlue Stilton
2 Baby Gem Lettuce, washed and shredded
125 gFresh Spinach
250 gCherry Tomatoes, halved
5 Brioche Burger Buns
50 mlSalad Dressing
