Vegetarian Nut Roast Dinner Recipe
A hearty, flavoursome meal that's not only suitable for vegetarians, but will delight any food lover. This recipe combines a savoury nut roast with a selection of deliciously roasted vegetables, tangy red cabbage sauerkraut, and creamy mushroom sauce.

METHOD
Step 1.
Preheat oven to 180°C. Grease a loaf tin with butter.Step 2.
Place mixed nuts into a processor and grind until crumb-like texture, then pour into a large bowl.Step 3.
Sauté onion and garlic in butter until soft, then add to the bowl of nuts. Mix in bread crumbs, eggs, thyme and sage. Season with salt and pepper.Step 4.
Press mixture into prepared loaf tin. Bake for 1 hour, or until the top is brown and crispy.Step 5.
For the potatoes and parsnips, toss them in oil, salt, and rosemary. Roast for 45 minutes or until golden and crispy.Step 6.
For the sauerkraut, simply mix thinly sliced red cabbage with vinegar and sugar, and allow to ferment.Step 7.
Steam the Brussels sprouts until tender.Step 8.
For the creamy mushrooms, slice and then sauté the mushrooms in butter, stir in cream and simmer till thickened to serve on the side.Step 9.
Prepare your gravy and serve warm.Step 10.
Slice nut roast and serve with all the accompaniments.
