Vegetarian Nut Roast Dinner Recipe

A hearty, flavoursome meal that's not only suitable for vegetarians, but will delight any food lover. This recipe combines a savoury nut roast with a selection of deliciously roasted vegetables, tangy red cabbage sauerkraut, and creamy mushroom sauce.

METHOD

  • Step 1.

    Preheat oven to 180°C. Grease a loaf tin with butter.
  • Step 2.

    Place mixed nuts into a processor and grind until crumb-like texture, then pour into a large bowl.
  • Step 3.

    Sauté onion and garlic in butter until soft, then add to the bowl of nuts. Mix in bread crumbs, eggs, thyme and sage. Season with salt and pepper.
  • Step 4.

    Press mixture into prepared loaf tin. Bake for 1 hour, or until the top is brown and crispy.
  • Step 5.

    For the potatoes and parsnips, toss them in oil, salt, and rosemary. Roast for 45 minutes or until golden and crispy.
  • Step 6.

    For the sauerkraut, simply mix thinly sliced red cabbage with vinegar and sugar, and allow to ferment.
  • Step 7.

    Steam the Brussels sprouts until tender.
  • Step 8.

    For the creamy mushrooms, slice and then sauté the mushrooms in butter, stir in cream and simmer till thickened to serve on the side.
  • Step 9.

    Prepare your gravy and serve warm.
  • Step 10.

    Slice nut roast and serve with all the accompaniments.

  13. 100 mlDouble cream
