Roasted Butternut, Garlic, Red Onion with Thyme Recipe

A delightful combination of sweet, caramelised butternut squash, with the aromatic flavours of roasted garlic, red onion and thyme, the perfect side dish for a cosy winter dinner.

METHOD

  • Step 1.

    Preheat your oven to 200°C.
  • Step 2.

    Slice the squash into medium-sized chunks, leaving the skin on.
  • Step 3.

    Peel and quarter the red onions.
  • Step 4.

    Chop the garlic bulbs in half, do not peel.
  • Step 5.

    Place all the ingredients on a baking tray, with the garlic facing cut side up. Drizzle with olive oil, and sprinkle thyme, salt and pepper.
  • Step 6.

    Roast in the oven for 1 hour, or until the squash is tender and slightly caramelised.
  • Step 7.

    Serve warm.

  3. 2 Garlic bulbs

  4. 2 tbspOlive oil

  5. 1 tbspDried thyme

  6. 2 tspSalt

  7. 1 tspPepper
