Roasted Butternut, Garlic, Red Onion with Thyme Recipe
A delightful combination of sweet, caramelised butternut squash, with the aromatic flavours of roasted garlic, red onion and thyme, the perfect side dish for a cosy winter dinner.

METHOD
Step 1.
Preheat your oven to 200°C.Step 2.
Slice the squash into medium-sized chunks, leaving the skin on.Step 3.
Peel and quarter the red onions.Step 4.
Chop the garlic bulbs in half, do not peel.Step 5.
Place all the ingredients on a baking tray, with the garlic facing cut side up. Drizzle with olive oil, and sprinkle thyme, salt and pepper.Step 6.
Roast in the oven for 1 hour, or until the squash is tender and slightly caramelised.Step 7.
Serve warm.
