METHOD

  • Step 1.

    In a medium saucepan, combine the milk, cream, and half the sugar. Heat over medium flame until the mixture is warm and the sugar dissolves.
  • Step 2.

    In a separate bowl, whisk together the egg yolks and the remaining sugar until the mixture is thick and pale.
  • Step 3.

    Gradually pour the warm milk mixture into the egg yolk mixture, whisking constantly to prevent the eggs from scrambling.
  • Step 4.

    Return the mixture to the saucepan and cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon.
  • Step 5.

    Remove from heat and stir in the dissolved espresso or coffee until well combined.
  • Step 6.

    Pour the mixture into a bowl and place it over an ice bath to cool quickly. Once cooled, cover and refrigerate until thoroughly chilled, about 2 hours.
  • Step 7.

    Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.

    Transfer the gelato to an airtight container and freeze until firm, about 1 hour. Serve chilled.
