Winter Salad with Blue Cheese & Citrus Recipe
A vibrant, colourful winter salad combining the bold flavours of shallots and blue cheese. Along with the earthy taste of beetroot, fresh tang from the citrus and a juicy burst of pomegranate seeds. Topped with crunchy walnuts, it's a delightful festive dish.

METHOD
Step 1.
Peel and finely chop the shallots.Step 2.
Peel the oranges and grapefruit, then slice into discs.Step 3.
Roughly chop the walnuts and set aside.Step 4.
In a large bowl, combine the salad leaves, chopped shallots, citrus, walnut pieces and crumbled over the blue cheese.Step 5.
Sprinkle the salad with pomegranate seeds.Step 6.
Drizzle with a dressing of your choice, we recommend a simple balsamic vinaigrette, before serving.
