METHOD
Step 1.
Whisk 6 egg yolks and 100g caster sugar in a large bowl until thick and pale. Incorporate 250g mascarpone cheese until smooth.Step 2.
In a separate bowl, lightly whisk 6 egg whites until soft peaks form. Gently fold the egg whites into the mascarpone mixture.Step 3.
Mix 300ml freshly squeezed orange juice with 2 tbsp Grand Marnier in a shallow dish. Briefly dip half of the ladyfingers into the mixture, ensuring they are not too soggy, and lay them at the bottom of a serving dish.Step 4.
Spread half of the mascarpone mixture over the ladyfingers.Step 5.
Repeat the process with the remaining ladyfingers and mascarpone mixture.Step 6.
Cover and refrigerate for at least 2 hours, or overnight for best results.Step 7.
Before serving, zest one medium orange and sprinkle the zest over the tiramisu. Lightly dust with cocoa powder through a sieve for the final touch.
