METHOD
Step 1.
Preheat your oven to 175°C and line a cupcake tin with paper liners.Step 2.
In a medium bowl, sift together 250g plain flour, 1 tsp baking powder, 1 tsp cocoa powder, and a pinch of salt. Set aside.Step 3.
In a large bowl, cream together 115g unsalted butter and 300g caster sugar until light and fluffy. Beat in 2 eggs, one at a time, then mix in 1 tsp vanilla extract and 1 tsp white vinegar.Step 4.
Gradually add the dry ingredients to the wet ingredients, alternating with 240ml buttermilk, beginning and ending with the dry ingredients. Mix until just combined.Step 5.
Mix in 2 tbsp red food colouring until uniformly coloured.Step 6.
Divide the batter evenly among the prepared cupcake cases and bake for about 20-25 minutes, or until a toothpick inserted into the centre comes out clean. Allow to cool.Step 7.
For the buttercream frosting, beat 150g unsalted butter until creamy. Gradually add 600g sifted icing sugar, 2 tbsp milk, and 1 tsp vanilla extract, beating until smooth and spreadable.Step 8.
Once cupcakes are cool, frost with the buttercream leaving one plain. Crumble the spare muffin into fine crumbs and sprinkle over the tops of the iced muffins as decoration.Step 9.
