METHOD

  • Step 1.

    Gather all your ingredients.
  • Step 2.

    In a medium saucepan, combine rhubarb, water, and sugar. Bring to a boil over medium heat, then simmer for about 5 minutes until the rhubarb is soft and the sugar has dissolved.
  • Step 3.

    Remove from heat and let the mixture cool slightly. Then, strain the mixture through a fine mesh sieve into a large jug, pressing on the solids to extract as much liquid as possible.

    Stir in the lemon juice and zest and refrigerate until chilled.
