Strawberries & Cream Cupcakes Recipe
These cupcakes are strawberry filled and topped with a luscious whipped cream frosting, a truly delightful treat.

METHOD
Step 1.
Preheat the oven to 180°C (350°F) and line a cupcake pan with paper liners.Step 2.
In a bowl, whisk together 1 cup of all-purpose flour, 1 tsp of baking powder, and a pinch of salt.Step 3.
In a separate bowl, cream together 1/2 cup of unsalted butter and 3/4 cup of granulated sugar until light and fluffy.Step 4.
Beat in 2 large eggs, one at a time, and then mix in 1 tsp of vanilla extract.Step 5.
Gradually add the dry ingredients to the wet ingredients, alternating with 1/4 cup of milk, and mix until just combined.Step 6.
Gently fold in 1/2 cup of finely chopped fresh strawberries.Step 7.
Divide the batter evenly among the cupcake liners, filling each about 2/3 full.Step 8.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.Step 9.
Remove from the oven and let the cupcakes cool in the pan for a few minutes before transferring to a wire rack to cool completely.Step 10.
For the Whipped Cream Frosting: In a mixing bowl, beat 1 cup of heavy whipping cream until soft peaks form. Add 2 tbsp of powdered sugar and 1 tsp of vanilla extract, and continue to beat until stiff peaks form.Step 11.
For Assembling: Once the cupcakes are completely cool, pipe or spread the whipped cream frosting on top of each cupcake. Garnish with sliced fresh strawberries on top of the whipped cream.Step 12.
Serve the Strawberry and Cream Cupcakes as delightful and light desserts.
