METHOD
Step 1.
Preheat your oven to 190 degrees Celsius.Step 2.
Roll out a pie crust and line the bottom of a pie dish with it. Poke with a fork to make holes.Step 3.
Peel and chop the apples. Combine with sliced apricots, sugar, flour, lemon juice, and cinnamon in a large bowl.Step 4.
Mix until fruit is well coated. Pour the fruit mixture into the pie dish.Step 5.
Position the second pie crust over the fruit filling. Trim, fold, and crimp the edges. Cut vents into the top crust.Step 6.
Brush the top crust with egg wash, then sprinkle with a little extra sugar.Step 7.
Bake for 50-60 minutes, or until the crust is golden and the fruit is bubbly and tender. Allow to cool before serving.
