METHOD

  • Step 1.

    Preheat your oven to 190 degrees Celsius.
  • Step 2.

    Roll out a pie crust and line the bottom of a pie dish with it. Poke with a fork to make holes.
  • Step 3.

    Peel and chop the apples. Combine with sliced apricots, sugar, flour, lemon juice, and cinnamon in a large bowl.
  • Step 4.

    Mix until fruit is well coated. Pour the fruit mixture into the pie dish.
  • Step 5.

    Position the second pie crust over the fruit filling. Trim, fold, and crimp the edges. Cut vents into the top crust.
  • Step 6.

    Brush the top crust with egg wash, then sprinkle with a little extra sugar.
  • Step 7.

    Bake for 50-60 minutes, or until the crust is golden and the fruit is bubbly and tender. Allow to cool before serving.
