Apricot Jam Tart with Toasted Meringue Recipe

METHOD
Step 1.
Preheat your oven to 180°C (350°F).Step 2.
Roll out your pastry on a floured surface and line your tart tin, trimming any excess. Prick the base with a fork.Step 3.
Line the pastry with baking paper, fill with baking beans and bake blind for 15 minutes. Remove the beans and paper, and bake for another 5 minutes until golden.Step 4.
Once cooled spread the apricot jam evenly over the base of the pastry.Step 5.
To make the meringue, beat the egg whites in a clean bowl until soft peaks form. Gradually add the caster sugar, beating until the mixture is glossy.Step 6.
Spoon the meringue over the jam, creating peaks with the back of your spoon.Step 7.
Reduce the oven temperature to 150°C (300°F) and bake for 25 minutes until the meringue is lightly toasted and crisp.Step 8.
Allow to cool in the tin before slicing and serving.

1 Rolled shortcrust pastry
200 gApricot jam
4 Egg whites
200 gCaster sugar
