Apricot Jam Tart with Toasted Meringue Recipe

METHOD

  • Step 1.

    Preheat your oven to 180°C (350°F).
  • Step 2.

    Roll out your pastry on a floured surface and line your tart tin, trimming any excess. Prick the base with a fork.
  • Step 3.

    Line the pastry with baking paper, fill with baking beans and bake blind for 15 minutes. Remove the beans and paper, and bake for another 5 minutes until golden.
  • Step 4.

    Once cooled spread the apricot jam evenly over the base of the pastry.
  • Step 5.

    To make the meringue, beat the egg whites in a clean bowl until soft peaks form. Gradually add the caster sugar, beating until the mixture is glossy.
  • Step 6.

    Spoon the meringue over the jam, creating peaks with the back of your spoon.
  • Step 7.

    Reduce the oven temperature to 150°C (300°F) and bake for 25 minutes until the meringue is lightly toasted and crisp.
  • Step 8.

    Allow to cool in the tin before slicing and serving.
