Barbecued Ribs with Chilli Cherry Glaze & Chimichurri Recipe

METHOD

  • Step 1.

    Begin by preheating your oven to 150°C. Prepare a baking tray with aluminium foil and a wire rack on top.
  • Step 2.

    In a bowl, mix together the brown sugar, smoked paprika, garlic powder, salt, and pepper. Rub this mixture thoroughly over the ribs.
  • Step 3.

    Place the ribs on the prepared rack and bake in the oven for 2.5 hours, until they are tender.
  • Step 4.

    While the ribs are baking, prepare the sweet chilli cherry glaze. In a saucepan, combine the cherries, sweet chilli sauce, water, and honey. Simmer over low heat for 15 minutes, then blend until smooth.
  • Step 5.

    For the chimichurri, mix parsley, coriander, garlic, red wine vinegar, olive oil, salt, and chilli flakes in a bowl. Adjust the seasoning according to taste.
  • Step 6.

    Once the ribs are baked, brush them generously with the cherry glaze and finish them off on a preheated barbecue for an additional 10 minutes, turning frequently to avoid burning.
  • Step 7.

    Serve the ribs hot, drizzled with more cherry glaze and accompanied by the vibrant chimichurri.
  • Step 8.

    Allow the ribs to rest for a few minutes before serving to let the flavours meld together perfectly.

  13. 2 tbspGarlic, minced

  14. 3 tbspRed wine vinegar

  15. 100 mlOlive oil

  16. 1 tspChilli flakes
