Barbecued Ribs with Chilli Cherry Glaze & Chimichurri Recipe

METHOD
Step 1.
Begin by preheating your oven to 150°C. Prepare a baking tray with aluminium foil and a wire rack on top.Step 2.
In a bowl, mix together the brown sugar, smoked paprika, garlic powder, salt, and pepper. Rub this mixture thoroughly over the ribs.Step 3.
Place the ribs on the prepared rack and bake in the oven for 2.5 hours, until they are tender.Step 4.
While the ribs are baking, prepare the sweet chilli cherry glaze. In a saucepan, combine the cherries, sweet chilli sauce, water, and honey. Simmer over low heat for 15 minutes, then blend until smooth.Step 5.
For the chimichurri, mix parsley, coriander, garlic, red wine vinegar, olive oil, salt, and chilli flakes in a bowl. Adjust the seasoning according to taste.Step 6.
Once the ribs are baked, brush them generously with the cherry glaze and finish them off on a preheated barbecue for an additional 10 minutes, turning frequently to avoid burning.Step 7.
Serve the ribs hot, drizzled with more cherry glaze and accompanied by the vibrant chimichurri.Step 8.
Allow the ribs to rest for a few minutes before serving to let the flavours meld together perfectly.
