Basic Moroccan Medley Couscous Recipe

METHOD

  • Step 1.

    In a large skillet, heat the olive oil over medium heat.
  • Step 2.

    Add the chopped onion and garlic, sauté until they are soft and translucent.
  • Step 3.

    Stir in the tomatoes, courgette, and red bell pepper, cooking until they start to soften.
  • Step 4.

    Mix in the spices: cumin, coriander, paprika, and a pinch of salt and pepper. Cook for another 2 minutes to release their flavours.
  • Step 5.

    Pour in the vegetable broth and bring the mixture to a simmer.
  • Step 6.

    Place the couscous in a large bowl. Pour the hot vegetable broth mixture over the couscous. Cover and let it sit for 5 minutes or until the liquid is absorbed.
  • Step 7.

    Fluff the couscous with a fork and gently stir in the chopped fresh coriander and mint.
  • Step 8.

    Serve the couscous garnished with toasted almonds and a wedge of lemon.

  10. 500 mlVegetable broth

  11. 200 gCouscous

  12. 20 gFresh coriander, chopped

  13. 20 gFresh mint, chopped

  14. 30 gToasted almonds, sliced

  15. 1 Lemon wedges
