Basic Moroccan Medley Couscous Recipe

METHOD
Step 1.
In a large skillet, heat the olive oil over medium heat.Step 2.
Add the chopped onion and garlic, sauté until they are soft and translucent.Step 3.
Stir in the tomatoes, courgette, and red bell pepper, cooking until they start to soften.Step 4.
Mix in the spices: cumin, coriander, paprika, and a pinch of salt and pepper. Cook for another 2 minutes to release their flavours.Step 5.
Pour in the vegetable broth and bring the mixture to a simmer.Step 6.
Place the couscous in a large bowl. Pour the hot vegetable broth mixture over the couscous. Cover and let it sit for 5 minutes or until the liquid is absorbed.Step 7.
Fluff the couscous with a fork and gently stir in the chopped fresh coriander and mint.Step 8.
Serve the couscous garnished with toasted almonds and a wedge of lemon.
