Everything Bagel Recipe

METHOD

  • Step 1.

    In a large bowl, combine the warm water and yeast. Let the mixture sit for 5 minutes.
  • Step 2.

    Stir the high-gluten flour and salt into the yeast mixture. Knead the dough on a floured surface for about 10 minutes.
  • Step 3.

    Place the dough in a greased bowl and cover it with a damp cloth. Let the dough rise in a warm place for 1 hour.
  • Step 4.

    Punch down the dough and divide it into 12 pieces. Roll each piece into a ball and then push a hole through the center of each ball. Stretch and shape the dough into a bagel shape.
  • Step 5.

    Cover the bagels with a clean cloth and let them rest for 30 minutes.
  • Step 6.

    Preheat your oven to 220 degrees Celsius.
  • Step 7.

    In a large pot, bring water and malt syrup to a simmer. Boil each bagel for 1 minute on each side.
  • Step 8.

    Dip the bagels into the topping - ensure you wet the bagels first so that the topping sticks to the surface.
  • Step 9.

    Place the bagels onto a baking sheet and bake them for 20 minutes, or until they are golden brown.
  • Step 10.

    Let the bagels cool on a wire rack.

  9. 2 lWater for boiling

  10. 50 gMalt syrup
