Grilled Halloumi & Asparagus in Ciabatta Roll Recipe

This tantalising recipe will delight your taste buds with its wonderful array of flavours. Grilled halloumi, asparagus and chunky tomato salsa in toasted ciabatta roll. Perfect for lunch.





  • Step 1.

    Start by preparing the chunky tomato salsa. Chop the tomatoes, red onion, garlic and coriander. Mix them all together in a bowl and squeeze in the juice of one lime. Add salt and pepper to taste and set aside.
  • Step 2.

    Preheat your grill to a medium heat. Drizzle the asparagus with olive oil, season with salt and pepper, and grill for about 8-10 minutes until tender and slightly charred. Set aside.
  • Step 3.

    Grill the halloumi cheese slices until they're crispy and golden brown, this should take around 2-3 minutes on each side. Meanwhile cut rolls in half and lightly toast under the grill.
  • Step 4.

    Finally, assemble your ciabatta rolls. Place a few slices of grilled halloumi on one side, a spoonful of the chunky tomato salsa, and top off with a few stalks of grilled asparagus.
  • Step 5.

    Serve immediately, while the halloumi is still warm. Enjoy!
