Grilled Halloumi & Asparagus in Ciabatta Roll Recipe

METHOD
Step 1.
Start by preparing the chunky tomato salsa. Chop the tomatoes, red onion, garlic and coriander. Mix them all together in a bowl and squeeze in the juice of one lime. Add salt and pepper to taste and set aside.Step 2.
Preheat your grill to a medium heat. Drizzle the asparagus with olive oil, season with salt and pepper, and grill for about 8-10 minutes until tender and slightly charred. Set aside.Step 3.
Grill the halloumi cheese slices until they're crispy and golden brown, this should take around 2-3 minutes on each side. Meanwhile cut rolls in half and lightly toast under the grill.Step 4.
Finally, assemble your ciabatta rolls. Place a few slices of grilled halloumi on one side, a spoonful of the chunky tomato salsa, and top off with a few stalks of grilled asparagus.Step 5.
Serve immediately, while the halloumi is still warm. Enjoy!
