METHOD
Step 1.
In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened.Step 2.
Add the pumpkin puree, vegetable broth, and spices (cumin, paprika, cayenne pepper, salt, and black pepper) to the pot. Stir well to combine.Step 3.
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 30 minutes, stirring occasionally.Step 4.
Use an immersion blender to carefully blend the soup until smooth. Alternatively, you can transfer the soup to a regular blender in batches and blend until smooth.Step 5.
Taste and adjust the seasoning as needed. If you prefer a spicier soup, you can add more cayenne pepper.Step 6.
Serve the spicy pumpkin soup hot. Garnish with chopped fresh coriander and a splash of cream, if desired. Top with a few pumpkin seeds.
