METHOD

  • Step 1.

    Preheat your oven to 200 degrees Celsius.
  • Step 2.

    Spread the nacho chips in a single layer on a baking tray. Sprinkle evenly with grated Cheddar cheese.
  • Step 3.

    Bake in the preheated oven until the cheese is melted and slightly golden, about 5-7 minutes.
  • Step 4.

    While the nachos are baking, prepare the guacamole. In a bowl, mash the avocados. Mix in 2 tbsp lime juice, garlic, half the tomatoes, and 1 tbsp of chopped coriander. Season with salt and pepper to taste.
  • Step 5.

    For the salsa, combine the rest of the diced tomatoes, red onions, jalapeños, and 2 tbsp of chopped coriander in another bowl. Add 2 tbsp lime juice and season with salt. Mix well.
  • Step 6.

    Serve the baked cheesy nacho chips with bowls of homemade guacamole and chunky salsa dip on the side.
