METHOD
Step 1.
Begin by pouring 500ml of boiling water over the bulgur wheat in a bowl. Cover and let it sit for about 20 minutes or until the water is fully absorbed.Step 2.
In a large mixing bowl, combine the soaked bulgur, onions, garlic, parsley, tomato paste, ground cumin, paprika, salt, and pepper. Mix until evenly combined.Step 3.
Carefully shape the mixture into small balls, approximately the size of a walnut.Step 4.
Heat olive oil in a non-stick frying pan over medium heat. Fry the köftesi balls in batches, turning occasionally, until golden brown and cooked through, about 5 minutes per batch.Step 5.
Place the cooked köftesi balls on kitchen paper to drain any excess oil.Step 6.
Serve warm with a side of natural yogurt or your favourite dipping sauce.
