METHOD

  • Step 1.

    Begin by pouring 500ml of boiling water over the bulgur wheat in a bowl. Cover and let it sit for about 20 minutes or until the water is fully absorbed.
  • Step 2.

    In a large mixing bowl, combine the soaked bulgur, onions, garlic, parsley, tomato paste, ground cumin, paprika, salt, and pepper. Mix until evenly combined.
  • Step 3.

    Carefully shape the mixture into small balls, approximately the size of a walnut.
  • Step 4.

    Heat olive oil in a non-stick frying pan over medium heat. Fry the köftesi balls in batches, turning occasionally, until golden brown and cooked through, about 5 minutes per batch.

    Place the cooked köftesi balls on kitchen paper to drain any excess oil.
