METHOD
Step 1.
Season the chicken breasts with salt and pepper, then roll in flour, dip in beaten eggs, and coat with the breadcrumbs.Step 2.
Heat oil in a large skillet over medium heat. Add the breaded chicken and cook until golden brown and cooked through, about 5-7 minutes per side. Remove from the skillet and set aside.Step 3.
In the same skillet, add the onion, garlic, and ginger and cook until softened. Stir in the curry powder and cook for another minute.Step 4.
Add the flour to the skillet and stir until the onions are coated. Gradually whisk in the chicken broth and soy sauce, then bring to a simmer.Step 5.
Simmer the curry sauce for 15-20 minutes, or until thickened. Season with salt and pepper to taste.Step 6.
Slice the cooked chicken into strips. Serve the chicken over steamed rice with the curry sauce poured on top.
