METHOD

  • Step 1.

    Season the chicken breasts with salt and pepper, then roll in flour, dip in beaten eggs, and coat with the breadcrumbs.
  • Step 2.

    Heat oil in a large skillet over medium heat. Add the breaded chicken and cook until golden brown and cooked through, about 5-7 minutes per side. Remove from the skillet and set aside.
  • Step 3.

    In the same skillet, add the onion, garlic, and ginger and cook until softened. Stir in the curry powder and cook for another minute.
  • Step 4.

    Add the flour to the skillet and stir until the onions are coated. Gradually whisk in the chicken broth and soy sauce, then bring to a simmer.
  • Step 5.

    Simmer the curry sauce for 15-20 minutes, or until thickened. Season with salt and pepper to taste.
  • Step 6.

    Slice the cooked chicken into strips. Serve the chicken over steamed rice with the curry sauce poured on top.
