Egg Fried Rice with Crispy Chicken Recipe

METHOD
Step 1.
Start by marinating the chicken pieces in soy sauce, minced garlic, and a squeeze of lime juice. Set aside for at least 20 minutes.Step 2.
Cook the rice according to package instructions, then allow it to cool completely. This step can be done ahead of time.Step 3.
Heat a large pan or wok over medium-high heat. Add a little oil and cook the marinated chicken until it's golden brown and crispy. Remove the chicken from the pan and set aside.Step 4.
In the same pan, add a bit more oil and scramble the eggs until fully cooked. Remove and set aside with the chicken.Step 5.
Add the diced carrots to the pan and stir-fry for a few minutes until slightly tender.Step 6.
Increase the heat and add the cooled rice, breaking up any clumps. Stir-fry for a few minutes until the rice is hot.Step 7.
Tear up the cooked chicken into pieces.Step 8.
Return the chicken and eggs to the pan with the rice. Add the chopped spring onions, stirring everything together until well combined and heated through.Step 9.
Serve the fried rice with wedges of lime on the side for squeezing over.
