METHOD

  • Step 1.

    Start by marinating the chicken pieces in soy sauce, minced garlic, and a squeeze of lime juice. Set aside for at least 20 minutes.
  • Step 2.

    Cook the rice according to package instructions, then allow it to cool completely. This step can be done ahead of time.
  • Step 3.

    Heat a large pan or wok over medium-high heat. Add a little oil and cook the marinated chicken until it's golden brown and crispy. Remove the chicken from the pan and set aside.
  • Step 4.

    In the same pan, add a bit more oil and scramble the eggs until fully cooked. Remove and set aside with the chicken.
  • Step 5.

    Add the diced carrots to the pan and stir-fry for a few minutes until slightly tender.
  • Step 6.

    Increase the heat and add the cooled rice, breaking up any clumps. Stir-fry for a few minutes until the rice is hot.
  • Step 7.

    Tear up the cooked chicken into pieces.
  • Step 8.

    Return the chicken and eggs to the pan with the rice. Add the chopped spring onions, stirring everything together until well combined and heated through.
  • Step 9.

    Serve the fried rice with wedges of lime on the side for squeezing over.
