METHOD

  • Step 1.

    Prepare your favourite cake recipe or use a store-bought cake and crumble it into a large bowl.
  • Step 2.

    Mix the crumbled cake with 120g of frosting until you have a moist, dough-like consistency.
  • Step 3.

    Roll the mixture into small balls, approximately 1 inch in size, and place them on a baking sheet lined with parchment paper.
  • Step 4.

    Chill the cake balls in the refrigerator for at least 1 hour to firm up.
  • Step 5.

    Melt 300g of dark chocolate in a bain-marie or microwave, stirring occasionally until smooth.
  • Step 6.

    Using a fork or skewer, dip each cake ball into the melted chocolate, ensuring it's completely coated. Allow the excess chocolate to drip off before placing back on the parchment paper.
  • Step 7.

    Sprinkle crushed pistachios over the chocolate while it's still wet.
  • Step 8.

    Refrigerate the cake balls for another hour or until the chocolate sets.
  • Step 9.

    Serve immediately, or store in an airtight container in the refrigerator until ready to serve.

    Sprinkle with icing sugar just before serving.
