Chocolate Mousse Recipe

A velvety, rich chocolate mousse that's both easy to make and delightfully indulgent.

METHOD

  • Step 1.

    Begin by finely chopping the chocolate into small pieces to ensure it melts evenly.
  • Step 2.

    In a medium-sized bowl, combine egg yolks and 2 tablespoons of sugar. Whisk until light and fluffy.
  • Step 3.

    In a small saucepan, heat half of the cream over medium heat until it begins to gently simmer. Do not boil.
  • Step 4.

    Gradually pour the hot cream into the egg yolk mixture, continuously whisking to temper the eggs.
  • Step 5.

    Transfer the mixture back into the saucepan and cook over low heat. Stir constantly until the mixture thickens and coats the back of a spoon.
  • Step 6.

    Remove from heat and add the chopped chocolate to the mixture, stirring until smooth and completely melted.
  • Step 7.

    In a separate bowl, whip the remaining cream with the vanilla extract until peaks form.
  • Step 8.

    Fold the whipped cream into the chocolate mixture until no streaks remain.
  • Step 9.

    In another clean bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining sugar and continue beating until glossy and stiff peaks form.
  • Step 10.

    Gently fold the egg whites into the chocolate mixture until just combined. Be careful not to overmix and deflate the mixture.
  • Step 11.

    Spoon the mousse into serving glasses and refrigerate for at least 2 hours, or until set.
  • Step 12.

    Serve chilled with a garnish of grated chocolate or fresh berries.
