Chocolate Mousse Recipe

METHOD
Step 1.
Begin by finely chopping the chocolate into small pieces to ensure it melts evenly.Step 2.
In a medium-sized bowl, combine egg yolks and 2 tablespoons of sugar. Whisk until light and fluffy.Step 3.
In a small saucepan, heat half of the cream over medium heat until it begins to gently simmer. Do not boil.Step 4.
Gradually pour the hot cream into the egg yolk mixture, continuously whisking to temper the eggs.Step 5.
Transfer the mixture back into the saucepan and cook over low heat. Stir constantly until the mixture thickens and coats the back of a spoon.Step 6.
Remove from heat and add the chopped chocolate to the mixture, stirring until smooth and completely melted.Step 7.
In a separate bowl, whip the remaining cream with the vanilla extract until peaks form.Step 8.
Fold the whipped cream into the chocolate mixture until no streaks remain.Step 9.
In another clean bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining sugar and continue beating until glossy and stiff peaks form.Step 10.
Gently fold the egg whites into the chocolate mixture until just combined. Be careful not to overmix and deflate the mixture.Step 11.
Spoon the mousse into serving glasses and refrigerate for at least 2 hours, or until set.Step 12.
Serve chilled with a garnish of grated chocolate or fresh berries.
