Chorizo Pasta Salad Recipe
This healthy and delicious chorizo pasta salad is packed with the bold, savoury flavours of olives, cherry tomatoes, peppers and red onion. A perfect dish for the summer barbecue or a healthy, light lunch.

METHOD
Step 1.
Boil the pasta as per the packet instructions until al dente. Once done, rinse under cold water and drain.Step 2.
In a skillet over medium heat, cook the chorizo until crispy. Transfer to a paper towel.Step 3.
In a large bowl, combine the cooked pasta, chorizo and all the veggies (olives, tomatoes, peppers, onion, cucumber and broccoli).Step 4.
In a small bowl, mix the olive oil, lemon juice, salt and pepper to prepare the dressing.Step 5.
Pour the dressing over the pasta and veggies. Toss to evenly coat all the ingredients.Step 6.
Plate the portions and enjoy.
