Chorizo Pasta Salad Recipe

This healthy and delicious chorizo pasta salad is packed with the bold, savoury flavours of olives, cherry tomatoes, peppers and red onion. A perfect dish for the summer barbecue or a healthy, light lunch.

METHOD

  • Step 1.

    Boil the pasta as per the packet instructions until al dente. Once done, rinse under cold water and drain.
  • Step 2.

    In a skillet over medium heat, cook the chorizo until crispy. Transfer to a paper towel.
  • Step 3.

    In a large bowl, combine the cooked pasta, chorizo and all the veggies (olives, tomatoes, peppers, onion, cucumber and broccoli).
  • Step 4.

    In a small bowl, mix the olive oil, lemon juice, salt and pepper to prepare the dressing.
  • Step 5.

    Pour the dressing over the pasta and veggies. Toss to evenly coat all the ingredients.
  • Step 6.

    Plate the portions and enjoy.

  1. 200 gPasta

  2. 100 gChorizo, diced

  3. 50 gOlives, halved

  4. 100 gCherry tomatoes, halved

  5. 1 Yellow peppers, diced

  6. 0.5 Cucumber, diced

  7. 100 gBroccoli, cooked & cut into small chunks

  8. 0.5 Red onion, peeled & diced

  9. 2 tbspOlive oil

  10. 1 Lemon

  11. 1 tspSalt

  12. 0.5 tspBlack pepper
