Mexican Eggs Recipe

These spicy Mexican poached eggs are a fantastic way to kickstart your morning, packed with flavours and hearty ingredients.

METHOD

  • Step 1.

    Heat large pan over medium heat, add the chorizo (no oil) and cook until soft, then add onion and cook until onion is translucent.
  • Step 2.

    Add garlic, chilli, and cumin, continue cooking for 2 more minutes.
  • Step 3.

    Add tomatoes, sugar and a good pinch of salt, stir well and cook for 15-20 minutes until mixture thickens.
  • Step 4.

    Make four wells in the mixture and break an egg into each one. Cover with a lid and cook for about 5 minutes until eggs are done to your liking.
  • Step 5.

    Sprinkle with coriander and serve hot with some bread for dipping.

INGREDIENTS

  1. 2 tbspOlive oil

  2. 1 Large onion, finely chopped

  3. 2 Garlic cloves, chopped

  4. 1 Red chilli, chopped

  5. 1 tspGround cumin

  6. 1 Cans of chopped tomatoes

  7. 1 tspSugar

  8. 1 tspSalt

  9. 4 Eggs

  10. 250 gChorizo, sliced

  11. 2 tbspFresh coriander, chopped

  12. 1 Loaf of crusty bread, sliced for serving
