Mexican Eggs Recipe
These spicy Mexican poached eggs are a fantastic way to kickstart your morning, packed with flavours and hearty ingredients.

METHOD
Step 1.
Heat large pan over medium heat, add the chorizo (no oil) and cook until soft, then add onion and cook until onion is translucent.Step 2.
Add garlic, chilli, and cumin, continue cooking for 2 more minutes.Step 3.
Add tomatoes, sugar and a good pinch of salt, stir well and cook for 15-20 minutes until mixture thickens.Step 4.
Make four wells in the mixture and break an egg into each one. Cover with a lid and cook for about 5 minutes until eggs are done to your liking.Step 5.
Sprinkle with coriander and serve hot with some bread for dipping.

2 tbspOlive oil
1 Large onion, finely chopped
2 Garlic cloves, chopped
1 Red chilli, chopped
1 tspGround cumin
1 Cans of chopped tomatoes
1 tspSugar
1 tspSalt
4 Eggs
250 gChorizo, sliced
2 tbspFresh coriander, chopped
1 Loaf of crusty bread, sliced for serving
